Good Morning, Sweeties….I am starting something new here today. On Wednesdays, I am going to be sharing some of my favorite Weight Watchers recipes. I have been doing WW for a little while now and Love it. The easiest and most successful program I have ever followed. I eat real food and the foods I am use to eating. No buying special, weird and different ingredients ( I use what is already in my pantry), no giving up whole food groups or Chocolate. Everything in moderation.
Today I made Lighter Chicken Salad from Skinnytaste.com. I love Gina’s recipes. I use A LOT of them. So many of the foods I am use to eating, she has taken and made them Weight Watchers friendly, points and all. I love her blog.
I made a couple of changes to the recipe. Instead of Hellmann’s light mayonnaise, I used Kraft Olive Oil Mayonnaise, at the same point value and I added fresh chopped sage. The fresh sage gave it added flavor.
Served on a bed of lettuce, this is a perfect lunch or summertime dinner. Made this way, you don’t even miss the globs of mayonnaise usually associated with Chicken salad. what could be better?
