St Patrick’s Day is Wednesday and the world will turn Green and Everyone will be Irish for the day. We Americans will look for any excuse for a party.

Colcannon is a traditional Irish potato and kale or cabbage dish. It sounded delicious and I couldn’t wait to try it. I, first, read about colcannon at the website: IrishCentral. I read this blog because I really am an Irish descendant and I find it fascinating.

Colcannon is simply mashed potatoes mixed with cooked kale or cabbage. I do like kale but prefer the milder taste of the cabbage with the mashed potatoes. The kale does give the colcannon a greener, more St. Patrick’s Day color. I added paprika to the top for some color and because I love it with mashed potatoes. Just something I got from my mother.

I can imagine this is a recipe will be eaten, not just on St. Patrick’s Day, but all year around. I love trying new recipes and hope you do, too.  Let me know what you think in the comment section below.
