7-Up Sald

In my family, there are certain recipes which are Holiday traditions. Most of them are from my grandmothers and mother. This one is no exception. For Easter dinner, I am going to be making a Holiday recipe from the past and one of my youngest daughter’s favorites, 7-Up Salad. Usually it was made at Thanksgiving and Christmas when I and my daughters were younger. Since travel at those holidays is not always possible because of snowy weather, I am switching up our tradition and making it at Easter.

7-Up Salad is one of those old jello recipes where you start with lemon jello (it was always lemon or lime) and add in lots of other ingredients. It is sweet and really not like salad at all.

7-Up Salad

1 large box of lemon jello

2 c. boiling water

2 c. 7-Up

2 1/2 c crushed pineapple, drained

1 1/2 c. mini marshmallows

3 c. sliced bananas

1 c. chopped nuts ( I use pecans, my mom used walnuts)

1 c. pineapple juice, drained from crushed pineapple (If your pineapple didn’t have a whole cup of juice in it, add water to juice to make one cup)

2 Tbsp. flour

1 egg, slightly beaten

1/2 c. sugar

2 Tbsp. butter

Mix jello with boiling water as per package directions. Instead of 2 c. cold water as per package directions, add the 2 c. 7-Up. Chill until jello is set. Add in pineapple, marshmallows, bananas, and nuts and refrigerate until firm.  If you are going to put jello in a decorative bowl, now is the time to do it.  When jello is firm, it is time to make the topping. Mix pineapple juice, egg, flour and sugar in a small saucepan. Cook until thick, stirring constantly. Watch that it doesn’t burn. Cool to room temperature, then spread over the jello. Top with whipped topping.

I am so sorry my picture doesn’t have the whipped topping on the top, but when I went to take the picture…well, I found out I forgot to get it.
