This recipe is great no matter, the season, the weather, or as something different for Taco Tuesday. In the recipe Gina gives, she uses zesty avocado cilantro buttermilk dressing, but I have to admit, I forgot to buy the avocado so I used some ranch dressing and it was great. I also shredded my own cheese. It was a lot fat cheddar. Because of the protein in the chicken and black beans, it is a very filling salad.
We here in Northern Nevada are still under cloudy, ugly weather. I am thinking of being brave and planting my tomatoes anyway. I checked the forecast and nighttime temperature are going to be in the 40s for the next seven day with daytime temps in the 60s and 70s. I hope everyone is doing well.
